Chef Xavier Pacheco is one of the most creative, committed, inspiring and determined young chefs in Puerto Rico and known and respected for being one of the first promoters of “Farm to the Table.” In 2001, he enrolled in Johnson and Wale’s University in Miami and worked as a trainee at Nobu Restaurant and as a cook at The Four Seasons Hotel Brickell Avenue.
In 2003, Pacheco traveled to Barcelona, Spain training with renowned Chef Angel Palacios. After an intense year of learning, Pacheco returned to Puerto Rico to help in his family’s new restaurant, Xavfra Latina. Honoring his talents, he was awarded as one of the “Best 10 Novel Chefs” by El Vocero newspaper, runner up in the Operación Chef competition and won first prize in Hotel and Tourism Appetizer Culinary Competition. Chef Pacheco returned to Miami in 2009 to work as Executive Sous Chef at the well-known restaurant Sushi Samba.
After more than 20 years of working in kitchens of different heritages, Pacheco decided to open a new restaurant, La Jaquita Baya, in Miramar, Puerto Rico. His work honors Puerto Rican food and often he travels the island in hopeful discovery of the best local ingredients.
