Husband-wife team and pastry chefs Jean-François Bonnet and Dina Melendez met 12 years ago at a pastry event. He was the Executive Pastry Chef at restaurant Daniel and she was part of the opening team at Mandarin Oriental Hotel.
Jean-François was born and raised in Frejus, a small town in the south of France. In 2003, world-renowned chef Daniel Boulud invited Jean-François to become Executive Pastry Chef at his legendary flagship restaurant, Daniel. During his years at Daniel, Jean-François was twice listed among Dessert Professional Magazine’s “Top Ten Pastry Chefs in America,” first in 2005, and again in 2006. In 2005, Chef Bonnet opened the Brooklyn-based chocolatier Tumbador®.
Dina was born and raised in Brooklyn, New York. She received her Pastry Arts degree from The French Culinary Institute in 1998, then started her career at Felidia under Chef Fortunato Nicotra and Lidia Bastianich, later rising to the position of Pastry Chef. After almost three years at Felidia, Dina moved on to Le Madre, and then Patria. Together, JF and Dina have over 20 years experience working in some of the most influential restaurants and hotels in New York City and France, and now can be found in Brooklyn.
